Croquete de ricota

Do Cucchiaio

 

Rende de 20 a 25 croquetes

Vai precisar de…
200g de ricota
100g de queijo parmesão ralado fino
1 ovo para a massa e + 1 para a hora de fritar
1 colher de sopa de salsa picada
Farinha de pão suficiente para passar nas bolinhas
Óleo para fritar (base de 2 xícaras de chá)
1 pitada de sal (opcional)

Vamos começar!
1- Rale o queijo e pique a salsa.
2- Em uma tigela, misture ricota, queijo parmesão ralado, 1 ovo, 1 colher de sopa de salsa picada e, se quiser, 1 pitada de sal (opcional). Misture até que fique uniforme.
2- Coloque o óleo para esquentar em fogo alto.
3- Enquanto esquenta, quebre 1 ovo em um prato fundo e bata-o com um garfo ou fuê.
4- Faça pequenas bolas com a massa de ricota, passe-as na farinha de rosca, depois no ovo batido e volte à farinha de rosca.
5- Quando o óleo estiver quente, abaixe o fogo para médio, espere alguns segundos e comece a fritar as bolas até que estejam levemente douradas. Não deixe muito tempo, pois elas podem abrir. Conforme for tirando, coloque-as em um prato forrado com papel toalha e está pronto! Sirva imediatamente e bom apetite.
