Bolinho de bacalhau

Vai precisar de…

[400g] 500g de bacalhau dessalgado e desfiado
2 colheres de sopa de salsa picada
600g de batata inglêsa
1 colher de cafezinho de pimenta do reino moída na hora
1 clara em neve bem batida
1 colher de sobremesa de Azeite de oliva
Óleo suficiente para fritura

Vamos começar…

1- Dessalgar o bacalhau (Deixar na água de véspera trocando a água por 3 a 4 vezes) no dia seguinte escorrer e desfiar o bacalhau, (veja no filme) .
2- Lave e descasque as batatas, coloque numa panela com água até cobri-las e espere até que cozinhe, escorra e amasse, passe na peneira e misture ao bacalhau.
3- Lave e pique a salsa, misture a pimenta moída, ao bacalhau e a batata
4- Bata muito bem as claras em neve e misture ao bacalhau até ficar todo homogêneo. Teste o sal.
5- Unte as mãos com azeite de oliva e faça os bolinhos, a cada bolinha passe azeite nas mãos pois ele gruda. Veja no filme.
6- Coloque o óleo para esquentar em fogo alto, faça o teste do palito de fósforo (veja no guia), depois que ele ascender, abaixe o fogo para médio e frite os bolinhos até que fiquem dourados. Vire-os enquanto fritam para dourar de todos os lados.

      Depende do tamanho que você enrolar, aqui deram uns 40 , a medida para essa quantidade pode ser 1 colher de chá cheia de massa, isso é uma base apenas.
      É muito bom, você não vai se arrepender.

      Não fiz esse teste, não sei te falar se vai ficar a mesma textura e sabor, sei que se colocar a massa na geladeira de um dia para o outro fica bom!
